Bendakaya Koora or Okra curry: Andhra recipe

Bendakaya Koora or Okra curry

What you need:

okra - 500 gm
coriander powder - 1 tsp
cumin powder - 1 tsp
jaggery powder - 1 tsp
mustard seeds - 1 tsp
dry red chilies - 4 cut into pieces
tamarind - 3 cm round ball
onion - ½ cup, finely chopped
curry leaves - few
oil - 4 tbsp
salt to taste

HoW to prepare Bendakaya koora / Okra curry:

Soak tamarind in ½ cup of water for 20 minutes and extract the pulp.

Wash the okra and wipe dry. Cut into 4 cm pieces. Heat oil in a pan.

Add mustard seeds. When they pops add red chillies.

After few seconds, add curry leaves and onion. Fry till onion is light brown colour.

Add okra and salt. Fry till okra is brown. Add cumin powder, coriander powder,

jaggery,and tamarind extract. Simmer till the okra is cooked and the masala coats the pieces. Now your Bendakaya koora / Okra curry is ready.
