Kodi Guddu Munagakaaya Kura : Egg - Drumstick Curry

Serves 5-6 persons

What you need:

Eggs - 6(boiled, cut + shape)
Onins - 2(nicely sliced)
Drumstick - 1(cut into 2 inch pieces)
Tamato - 2(finely chopped)
Chilli powder - 1 tsp
Daniya powder - 1 tsp
Coriander leaves - 1 tbsp
Oil - 1 tbsp
Salt to taste

For poppu:

Garlic cloves - 4(crushed)
Red chillis(dry) - 1 (remove seeds)
Mustard seeds - 1/2 tsp
Curry leaves(fresh) - 15

How to prepare:

Heat oil in a thick fry pan once hot and roast the boiled eggs on medium heat,for 2 minutes.

Add a pinch of turmeric powder and mix. Remove and keep aside. In the same fry pan add the drumstick pieces and
toss them for 2 minutes. Remove and keep aside.

Add the remaining oil to pan and once hot, add mustard seeds and let them pop. Add curry leaves, garlic cloves and the red chilli and toss for a few seconds till the flavors come out but don’t burn them. Add the onions and saute till they turn light brown colour.

Add the chilli powder, coriander powder and salt, mix it properly. After add tomato pieces and drumstick pices and cook for 3 minutes, again mix well and keep on a medium heat. Add 3 cups of water, increase heat and bring to a boil, after some time then it becomes thickish gravy.

Now add boiled and roasted eggs and combine, cook for 2 minutes and remove from heat. Finally garnish with coriander leaves. Now the Kodi Guddu Munagakaaya Kura is ready.
