Vankaya Vepudu : Andhra Recipe

Vankai Vepudu:

Prep & Cooking: 30 mts
Serves: 3-4

What you need:

Purple brinjals - 1/4 kg slice them into thin small slices
Turmeric powder - 1/4 tsp
Oil - 3 tsp
salt to taste

For poppu:

Curry leaves - 15
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp

For grinding:

Garlic - 4 cloves
Ginger - 2cm pice
Green chillis - 4
Coriander leaves - 2 tbsp
Onions - 2

How to prepare Vankaya Vepudu:

First cut the brinjals into thin small slices and keep it aside(or keep in salt water).
Heat oil in a thick frying pan and add the sliced brinjals and stir fry them till they are semi cooked.
Constantly stir fry to ensure they did not burn or stick to the pan.
Now add turmeric powder, salt and mix well and remove from the pan. In the
same fry pan add the remaining oil and add mustard seeds, let them pops.
After that add curry leaves, cumin seeds and toss about for 10 seconds.
Add the ground paste and saute for 8-10 mts or till the rawness of onions disappears.
Now add the fried brinjal pieces and mix well and let it simmer for 12 minutes. Adjust salt .
Finally garnish with coriander leaves.
Now your Vankaya Vepudu ready.
