Thotakura Vepudu: Andhra recipe



Thotakura Vepudu - Amaranth Leaves Stir-Fry

Serves: 3-4

WHAT YOU NEED FOR THOTAKURA VEPUDU:

Fresh amaranth leaves(picked, discard thick stalks, use tender stalks)- big bunch
Dry red chillis - 4(remove seeds)
Green chillis - 2(cut into small pices)
Onions - 1(finely sliced)
Garlic - 6 flakes(crushed)
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Spring curry leaves - 1
Turmeric powder - 1/4 tsp
Olive oil - 1 tbsp
salt to taste

HOW TO PREPARE THOTAKURA VEPUDU:

Boil the amaranth leaves and tender stalks in a cup of water for 12 minutes, such that the water is almost
absorbed.

Heat oil in a frying pan, add the mustard seeds and let them pop.Add the cumin seeds, green chillis,
garlic flakes, red chillis and curry leaves and saute for 1 minute.

Add the onions and saute till it become light brown. Add salt and turmeric powder and saute further for a minute. Add the boiled amaranth leaves and saute uncovered for 20 minutes or till done. Serve hot with rice.
